Almond Pesto Pasta

Using almonds instead of pine nuts to make a delicious pesto! We added crispy sausage, veggies and cherry tomatoes to make this pasta next level!


Roughly 2-3 cups of basil leaves

1/3 cup slivered almonds

1/4 cup Parmesan

2 tbsps minced garlic

Pinch of salt

1/2 cup olive oil 

14 oz sausage, sliced into 1 inch pieces (we used beyond meat)

1 cup of chopped peppers

2 cups of chopped zucchini

12-16oz pasta, cooked and reserve 1/2-3/4 cup pasta water

1 cup cherry tomatoes

Salt and pepper

1/3 cup butter


In a blender or mixer add the first 6 ingredients

Mix until creamy

Set aside

Preheat oven to 375

Add your sausage, peppers and zucchini to a baking sheet

Drizzle with olive oil

Spread out evenly and bake until crispy, roughly 20 minutes

Heat a large pan over medium

Add in your butter

Once melted add in your cooked pasta, pesto and crispy veggies

Top with your reserved pasta water

Season with salt and pepper

Mix well

Add in your cherry tomatoes

Cook, stirring often, until thickened 

Remove from heat

Serve immediately and enjoy!
