Artichoke with Creamy Balsamic Dipping Sauce


2 Whole Artichokes

4-5 garlic cloves

1 lemon

1/2-3/4 cup of Vegan Mayo

1/2-1 tbsp of Balsamic Vinegar

Freshly ground black pepper


Cut the top tip off your artichokes

Trim sharp stems with kitchen scissors

Cut the stem, leaving 1/2-1 inch left

Peal any lingering stem leaves off the stem

Bring a large pot full with 2-3 inches of water to a boil

Place your trimmed artichokes in water, stem side down

Add in your garlic cloves and juice of lemon to the pot

Bring water to boil again than turn down heat

Cover and cook for 30-45 minutes until stems are easily removed

Remove from pot and drain

In a small bowl add your vegan mayo and balsamic vinegar

Whisk together and season with pepper

Serve cooked artichoke with dipping sauce

Serve and enjoy!
