Black Bean Tostadas

Upgrade taco night with these crispy, flavor-packed Black Bean Tostadas! Made with creamy seasoned black beans, crunchy tortillas, and a homemade cashew cream. 

Perfect for weeknights, meal prep, or when you want something satisfying and healthy in under 20 minutes. 🌮


Ingredients

1 cup raw cashews, soaked in water over night then drained

3 tbsps lemon juice

1 tsp Salt

1 cup water

2 14.5 oz cans of black beans,  drained

1/4-1/3 cup diced shallots, diced 

1 tbsps minced garlic 

1 tsp paprika

1 tbsps chipotle chili powder

Pinch of sugar

1 cup veg beef broth 

Veg oil

Tostadas

Avocado

Cilantro

Olive oil spray



Directions

Place your soaked cashews in a blender/mixer add lemon juice, salt and 1 cup water

Blend until creamy

Salt to taste

Refrigerate until ready to use 

Heat a little oil in large pan over medium high heat

Add in your shallot, garlic, paprika, chipotle chili powder and a pinch of sugar

Mix well

Cook for 2-3 minutes

Add in your beans 

Mix well and cook for another 2 minutes

Add in your broth

Cook down for 5-10 minutes

Turn heat down

Mash beans to desired consistency 

Turn off heat

Place tostadas onto baking sheet

Spread each one with desired amount of bean mixture

Spray with olive oil

Place under the broiler for 1-2 minutes

Remove 

Drizzle with cashew cream

Top with avocados and cilantro

Serve with lime
