Buffalo Chicken Meatballs

These Buffalo Chicken Meatballs are spicy, juicy, and loaded with bold buffalo flavor 🔥 Perfect for game day, meal prep, or an easy weeknight dinner.

Ingredients

16oz shredded vegan chicken, we used @daring but you can use shredded tofu or jackfruit

1/3-1/2 cup buffalo sauce plus more for garnish

1/2 cup chopped celery

1/3 cup chopped cilantro

1 cup shredded vegan cheese

6-8 oz of vegan cream cheese, room temperature

1 egg substitute 

3/4 cup panko breadcrumbs

Vegan ranch, vegan blue cheese and chives for garnish 

Oil spray or oil and brush

 

Directions

Preheat oven to 400

If using daring foods make sure it’s thawed

In a large bowl add your vegan chicken substitute, 1/2 cup buffalo sauce, 1/2 cup celery, 1/3 cup cilantro, 1 cup shredded cheese, and 1 vegan egg substitute 

Mix well

Add in cream cheese and mix well

Form into 1-2 inch balls

Place onto prepared baking sheet

Spray or brush with oil

Bake in preheated oven for 20-25 minutes

Check them after 20 minutes

Remove and drizzle with remaining buffalo sauce

Garnish with blue cheese and green onions

Serve with ranch!
