Blueberry Sausage Pancake Casserole

This blueberry sausage pancake casserole is the ultimate breakfast mashup! Fluffy pancakes, juicy sausage, and sweet bursts of blueberry all baked into one easy dish. It’s the perfect dump-and-bake breakfast recipe for weekends, brunch, or meal prep!


Ingredients

2 cups pancake mix

2 egg substitutes

1 cup non dairy milk

1/4 cup plain oil

3 tbsps sugar

2 tsps baking powder

Maple syrup

12oz ground vegan sausage cooked and crumbled

2 cups frozen blueberries

Vegan Butter 



Directions

Preheat oven to 400

Combine the first 6 ingredients into a large bowl

Drizzle with a little maple syrup 

Whisk until creamy

Gently fold in most of your sausage and blueberries keeping a few to top on the dish 

Pour into greased baking dish

If you want the dish thick use a 8x8 or 9x9

If you want them thinner you can use a 9x11 or 9x13 dish

Top with remaining sausage and blueberries

Bake in preheated oven for 20-25 minutes until golden

Remove and cool 5 minutes

Cut into serving sizes

Serve warm with butter and maple syrup
