Breakfast Biscuit Casserole

A delicious hearty breakfast casserole using vegan friendly canned biscuits!


1 16 oz can of vegan friendly biscuits, chopped into pieces

1 1/2 cups of vegan cheese shreds

7oz of vegan breakfast sausage, cooked and chopped

1 cup of chopped cherry tomatoes

2-3 cups of vegan scrambled eggs

2 tbsps vegan mayo

2 tbsps ketchup

Salt and Pepper

Green onions, chopped


Preheat oven to 350

Spray a 8x8 or 9x9 baking pan with cooking spray or vegetable oil

Add your biscuit pieces, cheese, sausage, tomatoes, vegan eggs, mayo, and ketchup Season with salt and pepper

Add in a handful of chopped green onions

Mix well

Bake in preheated oven for roughly 30-35 minutes until golden

Remove and garnish with more green onions

Serve and enjoy!
