Brown Butter Oatmeal Cookies

These Brown Butter Oatmeal Cookies are everything you want in a cookie. Crispy edges, soft and chewy centers, and rich caramel-like flavor from perfectly browned butter. They’re simple to make but taste like they came straight from a bakery.


Ingredients

1 cup vegan butter, two sticks

1 1/2 cups all purpose flour

1 tsp baking soda

1 tsp salt

3/4 cup brown sugar

1/3 cup white sugar

2 vegan eggs, we used 1/2 cup apple sauce

1 tsp vanilla

2 cups old fashioned oats


Directions

Heat a wide shallow pan over medium heat

Add in your butter 

Once butter has melted continue to heat and stir u til translucent

Keep stirring and cooking until it starts to bubble

After a foam develops your almost done

Keep stirring until golden

Keep in mind it will still cook after pan is removed from heat

Don’t let it burn

Once golden amber in color allow to cool

Into a medium bowl add your flour baking soda and salt

Mix well

Into a large bowl add your sugars, vegan eggs, vanilla and cooled browned butter

Mix well

Add in your flour mixture

Mix until flour mix is combined but don’t over mix

Fold in your oats

Mix

Once dough is formed refrigerated covered for one hour

Preheat oven to 350

Remove dough and let sit out while oven is heating up

Use medium-large ice cream scoop and scoop into balls

Place onto parchment lined baking sheet

Bake for 13-15 minutes 

Remove and use a round circle to mold them back into a circle while still warm if needed

Should be golden around edges but look underdone in center

Let cool

Repeat with remaining dough

Serve and enjoy!
