Buffalo Chicken Pasta



All things Buffalo chicken, but in a delicious creamy pasta! 


Ingredients

2-3 Tbsps Vegan Butter

8oz Vegan Chicken, we used Daring Foods

1 1/4 cup diced celery

8oz Vegan Cream Cheese

1-2 Cups Vegan Mozzarella Shreds

3/4 Cup of Buffalo Sauce

3/4 Cup Vegan Ranch

1 Cup Broth

16oz cooked pasta 

1/2 Cup Vegan Bleu Cheese

1/2 Cup Chopped Chives


Directions

Heat your butter in a large pan over medium high heat

Once melted add in your vegan chicken

Cook for 5-7 minutes until browned on all sides

Add in 1 cup of celery

Cool for 2 minutes

Add in your cream cheese

Once melted add in your mozzarella, Buffalo sauce, ranch and 1 cup of broth

Cook stirring often

Once cheese has melted and sauce is a vibrant orange add in your cooked pasta (if you like a really saucy pasta I suggest using 12-14oz of pasta)

Once pasta is fully coated in sauce add in 1/2 cup bleu cheese and a handful of chives

Mix well

Turn off heat

To garnish drizzle top of pasta with Buffalo sauce and ranch

Then top with remaining celery and chives

Serve and enjoy!
