Cheesy Taco Skillet



A quick and easy one pot meal packed with vegan grounds, onion, peppers, tomatoes and vegan cheese. This is perfect for burrito bowls, tacos, salads and so much more!


Ingredients

12oz vegan grounds, we used impossible

1/2 onion, diced

1 red bell pepper, diced

1 orange bell pepper, diced

1 green bell pepper, diced

1 taco seasoning packet, we used Riega foods

1 10oz can of rotel diced tomatoes and green chilies

1-2 jalapeños, finely chopped

15oz can of pinto beans, drained

7oz vegan cheese shreds, we used a Mexican blend

1 bunch of cilantro, chopped

Avocado for serving

Avocado or vegetable oil


Directions

Heat a large deep pan to medium high heat

Add in a little avocado or vegetable oil

Once hot add in your onion

Sauté for 5 minutes

Add in you vegan grounds and crumble and cook until starting to brown

Add in your bell peppers

Mix well and cook for 5 minutes

Add in your taco seasoning, can if rotel, beans and jalapeño

Cook for 5 minutes, stirring often

Add in your vegan cheese shreds

Cook stirring until melted, roughly 5 minutes

Turn off heat

Add in a handful of your cilantro

Mix well

Garnish top with more cilantro

Serve each plate with avocado and cilantro

Enjoy!
