Chicken Alfredo Bites

These Chicken Alfredo Cups are creamy, cheesy, crispy, and dangerously easy to make. If you love classic chicken alfredo pasta, wait until you try it baked into handheld cups!


Ingredients

8oz vegan chicken pieces

3 tbsps vegan butter

2 garlic cloves minced

3 tbsps flour 

2-3 cups plant milk

1 bouillon cube

1 cup shredded vegan mozzarella 

Salt and pepper

Parsley, chopped

1 sheet of puff pastry

Veg oil

12 muffin pan 


Directions

Preheat oven to 400

Heat a little oil in a pan to medium high heat

Add in your vegan chicken and cook into golden

Remove and roughly chop

Return pan to heat and turn down to medium

Add in your butter

Once melted add in your garlic and cook 1-2 minutes

Add in your flour and whisk until thickened

Slowly add in 1-2 cups of milk

Add in your bouillon cube

Mix until thickened adding in more milk if too thick

Add in your chicken and mozzarella

Mix until cheese starts to melt, if too thick add in more milk (you want it thick but not as thick as paste)

Season with salt and pepper

Add in a small handful of chopped parsley

Remove from heat

Roll out puff pastry into large rectangle

Cut into 12 even squares 

Press each square into greased muffin pan

Fill each muffin with generous amount of Alfredo mix

Bake in preheated oven for 25-30 minutes

Remove and garnish with parsley

Serve and enjoy!
