Coffee Cake Cookies



Just like a delicious coffee cake but in a cookie form. And to make this recipe even easier we are using a box cake mix to make the cookie part. How easy is that??


Ingredients

For the cookies:

15.25oz box of vegan friendly cake mix, we used Duncan’s Hines Classic Yellow Cake Mix

2 vegan eggs, which works out to 1/2 cup of liquid just vegan egg

1/2 cup vegetable oil


For the crumble:

1/4 cup of vegan butter, cut into chunks 1/4 cup brown sugar 1/2 cup flour


For the icing:

1 cup of powdered sugar

2-3 tbsps of vanilla non dairy milk or creamer



Directions

Preheat oven to 350

In a small bowl add the ingredients for your crumble

Using a fork mix until crumbly and set aside

In a large bowl add your cake mix, vegan egg and vegetable oil

Mix well until creamy cookie dough consistency (you can add in more all purpose flour if too thin or more oil if too thick)

Roll into roughly 1-2 inch round balls

Place balls onto baking sheet 2 inches apart

Using a spoon make a divot in the top of cookies for your crumble

Fill each divot with your crumble

Bake in preheated oven for 13-15 minutes

Remove cookies from oven and let cool

While cookies cool make your icing

Mix together your powdered sugar and non dairy milk

Mix well until creamy (if too thick add in more milk, if too thin add in more powdered sugar)

Drizzle each cookie with icing

Serve and enjoy!!!
