French Onion Smashed Potatoes

These French Onion Smashed Potatoes taste like your favorite bowl of French onion soup… but in crispy potato form. Soft on the inside, golden and craggy on the outside, smothered in caramelized onions, melted cheese, and fresh herbs. Comfort food at its absolute best.


Ingredients

Roughly 2lbs baby Yukon potatoes

2 large onions thinly sliced

3-4 tbsps vegan butter

Olive oil or veg oil spray

1/4 cup balsamic vinegar 

1-2 tsps dried thyme 

Shredded mozzarella 

Shredded or grated Parmesan

Salt

Freshly chopped green onions


Directions

Heat a large non stick pan over medium heat

Add in your butter

Once melted add in your onion 

Cook and stir often not allowing it to burn

Should take around 35-45 minutes

Once onions are starting to turn caramelized add in your balsamic

Cook down until golden and caramelized 

While onions are cooking, cook your potatoes

Boil potatoes in salted water until soft

Drain and pat dry

Preheat oven to 450

Place cooked potatoes onto a prepared baking sheet (lined with parchment paper and sprayed with oil)

Carefully smash each potato doing your best to keep them from separating

Spray with oil

Sprinkle with salt

Bake in preheated oven for 25-30 minutes until crispy 

Remove from oven

Top each potato with a sprinkle of shredded mozzarella

Add your caramelized onions

Sprinkle with dried thyme

Lastly sprinkle with shredded Parmesan

Return to oven for 5-7 minutes until cheese has melted

Remove and garnish with green onions

Serve and enjoy!
