Making a simple yet delicious Broccoli and Cheese Soup, and serving it up in a Bread Bowl.
Ingredients
3 Tbsps vegan butter
2 garlic cloves, minced
2 Tbsps flour
2 cups non dairy milk
2 chicken less cubes
3 cups veg broth
1 cup shredded carrots
12-16oz steamed broccoli
Salt and pepper
Pinch of paprika
2 tbsps cornstarch slurry (2 tbsp. cold water mixed with 1 tbsp. cornstarch)
14oz vegan cheese shreds
1/4 cup nutritional yeast
Bread boules, warm (if serving in bread bowl)
Directions
Heat a large stock pot to medium
Add in butter
Once melted add in your garlic
Cook for 2-3 minutes
Whisk in your flour
Slowly add in your non dairy milk
Add in your chicken less cubes and water
Add in your carrots
Cover and cook for 10 minutes
Add in your broccoli
Season with salt, pepper and paprika
Add in your cheese and nutritional yeast
Cook until melted
Turn off heat
Add in cornstarch slurry
Stir until thickened
Taste and season if needed
Serve in bread bowl and regular bowl
