These Easy Mini Banana Coconut Cream Pies are creamy, fluffy, coconutty perfection in every bite! 🍌🥥

If you love banana cream pie and coconut desserts, this recipe is the best of both worlds!

✨ Perfect make-ahead dessert


Ingredients

1 package of jello vanilla instant pudding (3.4oz)

1 cup plant based milk

11.5oz can condensed coconut milk

1 1/2 cups shredded coconut 

8oz frozen plant based whipped cream topping

Toasted coconut, recipe below

Bananas, sliced 

Mini pie crusts, we used keeblers mini graham cracker crust 


Directions

Add your jello mix to a large bowl 

Add in milk and condensed coconut milk

Whisk until creamy

Add in your coconut

Mix well

Fold in roughly 1/2 cup of whipped cream

Place mini pies onto baking sheet

Place sliced bananas on bottom

Pour your mix ontop

Place a layer of remaining whipped cream on top

Place in refrigerator for 4 hours to set

Remove when set and garnish tops with toasted coconut

Serve and enjoy! 


Toasted coconut

2 cups shredded coconut, sweetened or unsweetened but I prefer sweetened 

Preheat oven to 350

Place coconut onto a sheet pan in an even layer

Bake job preheated oven for 9-12 minutes stirring a few times until golden

Remove and let cool
