A delicious easy to make sheet pan meal perfect for weeknight meals or even meal planning. Just take your veggies and toss with an easy to make sauce, bake and you're done.
Ingredients
3/4 cup of balsamic vinegar
1/4 cup olive oil
2 tbsps minced garlic
1 tbsp Italian seasonings
Salt and pepper
16oz block of extra firm tofu, drained and pressed
12 oz broccolini
1/2-1 onion, diced
1 bell pepper, diced
1-2 zucchinis, diced
1 jalapeño, sliced
1-2 cups cherry tomatoes
4-6 tbsps butter, optional
Directions
Preheat oven to 375
In a small to medium bowl add first 4 ingredients
Season with salt and pepper
Whisk until mixed
Dice you tofu into small pieces
Grease a large sheet pan
Place down your veggies and tofu
Pour sauce on top and carefully toss tofu and veggies
Spread your sliced jalapeño and cherry tomatoes evenly around
If using, place small pieces of butter evenly around sheet pan
Bake in preheated oven for 25-35 minutes
Serve great with rice, quinoa, or salad
