Today we are taking all things street corn and making this delicious Street Corn Soup. A lot of corn soup recipes top with tortilla strips but today we are garnishing with roasted corn to add the perfect crunch!
Ingredients
1 onion, diced
3 tbsps olive oil or butter
6 cups cooked corn
2 tbsps minced garlic
Salt and pepper
1 tsp cumin
1 tbsps chili powder
1 tsp paprika
1 tbsps dried chives
4-5 cups of broth
8oz vegan cream cheese
1 bouillon cubes, optional (the broth I used wasn’t salt enough)
1/4 cup lemon or lime juice
For plating: vegan crumbled feta, cilantro, jalapeños, limes and roasted/salted corn
Directions
Heat a large pot to medium
Add in your olive oil
Once hot add in your onion
Sauté until translucent
Season with salt and pepper
Add in your garlic, cumin, chili powder, paprika and dried chives
Mix well
Add in your corn
Cook for a few minutes while stirring
Remove 3 cups of corn mix from pan and set side
Add in your broth to the pot
Cook for 10 minutes
Blend, you can use an immersion blender or add to blender, blend and then return to pan
You can make this really creamy or leave it a title chunky, up to you
Once desired consistency is met add on your bouillon cube if using and cream cheese
Cook and stir until cheese has melted
Once cheese has melted return your saved corn mixture to pan
Add in lime or lemon juice
Mix well
Cook for an additional 5 minutes then serve
To plate:
Add desired amount into bowl
Sprinkle with vegan feta
Add your cilantro, jalapeños and a lime slice
Lastly garnish with roasted corn
Serve and enjoy!
