Easy Vegan Fried Rice



Easy and delicious vegan fried rice in the comfort of your own home!


Ingredients

12oz vegan egg, we used Just Vegan Egg (It needs to be a vegan egg that you can scramble)

1 tbsps of sesame oil, or vegan butter

12oz frozen peas and carrots

2 cloves of garlic, minced

4 cups of cool/cold cooked rice, we love Minute Rice for this recipe (Cook and cool in refrigerator)

1/2 cup soy sauce

1 tbsp hoisin sauce

Roughly 1/2-2/4 cup of chopped Green onions



Directions

Scramble your vegan egg in a large deep frying pan

Once scrambled, add in sesame oil or butter

Add your frozen veggies

Cook for 5 minutes, stirring often

Add in your minced garlic and cook for 2 minutes

Add in your cooked rice, soy sauce, and hoisin sauce

Mix well

If parts of rice are still white, add in more soy sauce

Cook for 5-7 minutes

Add in a handful of green onions

Mix well, turn off heat

Serve and garnish with green onions
