Lemon Poppy Seed Yogurt Loaf

This Lemon Poppy Seed Yogurt Loaf is soft, moist, bright, and packed with fresh lemon flavor 🍋 The yogurt keeps it extra tender while the poppy seeds add the perfect little crunch. Finished with a sweet lemon glaze, this easy loaf tastes just like a bakery treat at home! The best part is that its SUPER easy to make!


Ingredients

1 1/2 cups all purpose flour

3 tsps of baking powder

1 cup non dairy vanilla bean yogurt

2/3 cup white sugar

1/3 cup plain vegetable oil

Juice from 1-2 lemons

1-2 tbsps poppy seeds 

Zest from one lemon

Icing

1 cup powdered sugar

2-3 tbsps lemon juice

Whisk until creamy. Start with 2 tbsps lemon juice adding more if too thick 



Directions 

Preheat oven to 350

Line a loaf pan with parchment paper and spray with oil

In a medium large bowl add your yogurt, sugar, oil, lemon juice and lemon zest

Whisk until creamy

Stir in poppy seeds

Add in your flour and baking powder 

Mix well

Pour into prepared loaf pan

Spread evenly into the pan

Bake in preheated oven for roughly 60 minutes until golden and toothpick comes out clean

Remove and cool

Prepare icing

Drizzle onto

Allow to harden a bit 

Slice, serve and enjoy!
