Loaded Reuben Fries

There is something really special about the flavors in a Reuben. So I thought, why not add them to my favorite food group, Fries! Wow, I'm so glad I did. This dish is so delicious. Can't wait for you all to try them too!

1 cup of Vegan Mayo

1/3 cup of ketchup

1 tbsp finely chopped onion

Splash of hot sauce of choice

1 package of Tofurky hickory or peppered deli slices

Liquid from 1-15oz can of beets

1 tbsp of red wine vinegar

1 tsp of pepper

1 rounded cup of Sauerkraut

Roughly 5-6 slices of cheese of choice, we used Follow Your Heart Provolone Slices

Directions

Mix together the first 4 ingredients

Marinate in refrigerator until ready to use

Chop your deli slices into roughly 1 ½ inch pieces

Place into a container with a lid

Pour the beet liquid over the deli meat

Season with red wine vinegar and pepper

Using tongs or your hands, make sure that the deli slices are fully coated in the liquid

Marinate in refrigerator for roughly 2-4 hours so the deli slices get died

Cook fries according to directions, keep oven on a high temp after cooking fries

Once fries are cooked place them into an oven friendly pan or skillet

Top fries with your cheese slices

Remove your deli slices from liquid and place the pieces on top of cheese

Add your sauerkraut on top of the meat
