Mexican Breakfast Cups





Using Plant Ranch Foods Carne Asada to create the most delicious and simple breakfast cups. In addition to the Vegan Carne Asada it is loaded with veggies, cheese and Just vegan egg. Served up in a flour tortilla. Perfect breakfast to serve at a brunch or for anyone on the go.


For this recipe I used tortilla lands uncooked flour tortillas. If you can't find those simply replace with regular flour tortillas.


Ingredients

Roughly 4-6 Tortilla Land Uncooked Medium-Large Flour Tortillas

Roughly 3/4 of Plant Ranch Foods 16 oz package of Carne Asada, prepared

1/3 cup of diced white onions

1 small green bell pepper, chopped

1 rounded cup of cherry tomatoes, sliced in half

2 tbsps of chipotle peppers in adobo sauce

1 small jalapeno sliced, seeds removed or not, up to you

Dash of cumin

Dash of oregano

Salt and Pepper

1/2 bunch cilantro, roughly chopped

1 1/2 cups of vegan white shredded cheese

1-2 bottles of Just Vegan Egg

Oil




Directions

Preheat oven to 350

While oven is heating prepare your filling

Heat a little oil in a medium/large frying pan over medium heat

Add in your onion and saute for 2-3 minutes

Add in your bell pepper, tomatoes, chipotle peppers, and jalapeno

Cook for 2-3 minutes stirring often

Add in your prepared Carne Asada

Season with your cumin, oregano, salt and pepper

Add in your cilantro and cheese

Turn off heat, let cool slightly

Grease your muffin pan

Cut out circles in your dough, big enough to form cups inside muffin pan

Place circles into muffin pans

Spoon in a generous amount of filling

Pour your Just Vegan egg over the mix to top

Place in preheated oven for 20-30 minutes until center is firm

Remove from oven and let sit 5 minutes before removing

This should make between 10-12 muffins

Serve and enjoy!
