Mushroom, Tomato And Spinach Frittata

Today we are making a Frittata, basically a Quiche without the crust. And it's absolutely delicious! All you have to do is throw together a few ingredients, bake and boom, you have a tasty and hearty breakfast!


1 tbsp vegan butter

1/2 onion, diced

6-8oz mushrooms

8-10oz spinach

1 cup cherry tomatoes

Roughly 7oz vegan white cheese shreds

Roughly 7oz yellow vegan cheese shreds

Salt and pepper

12oz liquid just vegan egg


In a medium non stick pan heat your butter over medium

Add in your onion and sauté for 5 minutes

Add in your mushrooms and cook for 2-3 minutes

Add in your tomatoes

Mix well

Add in your spinach and cook until wilted

Season with salt and pepper

Remove from heat and cool

Preheat oven to 375

Grease your pan, I used a glass pie pan

Pour in your liquid egg

Add in a handful of white cheese and a handful of yellow cheese

Spoon in your veggies

Season with salt and pepper

Carefully mix

Top with a Few sprinkles of both cheeses

Bake in preheated oven for roughly 35 minutes until egg is set

Remove and let sit 5-6 minutes

Cut, serve and enjoy!
