One Pot Spinach And Artichoke Pasta



A delicious pasta, cooked in one pot packed with all the flavors of spinach and artichoke dip!


Ingredients

16oz of uncooked pasta

3 tbsps vegan butter

2 garlic cloves, minces

8oz of vegan cream cheese

1 1/2 cups of unflavored non dairy milk

14oz of artichoke pieces

1 cup of vegan parmesan

2 cups of packed spinach leaves

Salt and pepper

1/2-1 tbsp of crushed red pepper

1/3 cup of nutritional yeast, optional

Handful of fresh parsley


Directions

In a large deep frying pan cook your pasta according to directions

Once pasta is cooked remove from pan

Return pan to medium heat

Add in your butter

Once melted add in your garlic

Cook for 1-2 minutes

Add in your vegan cream cheese

Cook stirring until melted

Slowly add in your non dairy milk

Cook until heated

Add in your cooked pasta, artichoke, parmesan and spinach

Mix well

Cook for 5 minutes

If using nutritional yeast add in now

Season with salt and pepper

Add in your crushed red pepper

Mix well

Garnish with fresh parsley

Serve and enjoy!
