PB&J French Toast Muffins

All the cozy flavors of PB&J and French toast. Baked into soft, fluffy muffins. Each bite has creamy peanut butter, sweet jelly, and custardy French toast vibes with golden edges. Easy, nostalgic, and dangerously good.


Ingredients

1 cup vegan liquid egg

1 cup of non dairy milk

1 tsp cinnamon

Sliced bread roughly 10-12 slices to make 5-6 sandwiches 

Peanut butter

Jelly or jam of choice

Powdered sugar and syrup for serving 

Small/medium muffin pan


Directions

Preheat oven to 350

In a medium bowl whisk together your milk egg and cinnamon

Set aside

Take two pieces of bread 

Spread one with peanut butter on one side

Spread the other with jelly

Make into sandwich and gently press down

Cut into small squares

Repeat with remaining bread

Place into greased muffin pan

Pour your milk and egg mixture on top

Let sit for 8-10 minutes

Bake in preheated oven for 20 minutes

Remove and cool slightly

Remove from pan and garnish with powdered sugar

Serve with syrup
