Potato Kugel Cups




Potato Kugel is a traditional Jewish dish served during the high holidays. There are several different types of Kugels, which is basically a casserole dish. Today we are making a Potato Kugel using shredded potatoes. Instead of baking it up in a casserole dish we made individual cups. What I love about making potato kugel in cups, is that it gives much more of a crispy edge around each serving!


To make this dish even easier to make we are using store bought shredded hash browns!


Ingredients

20oz store bought shredded hash browns

1/2 onion, finely diced

1/4 cup of vegetable oil

3/4 cup of liquid egg, we used Just Vegan Egg

Salt and pepper

Cooking Spray



Directions

Preheat oven to 400

Once oven is hot add in your empty muffin pan to preheat

In a large bowl add your hash browns, onion, vegetable oil, and vegan egg

Season generously with salt and pepper

Mix well

Carefully remove pan from oven

Spray with cooking spray

Fill each cup with your potato mix

Bake in preheated oven for roughly 45 minutes until browned

Remove and cool 5 minutes

Remove from pan

Serve and enjoy!


I love to serve with a little vegan sour cream!
