A delicious bread pudding with the mix of pumpkin to give it all the feels. This dish is sweet, hearty and perfect for those cool mornings or nights!
1/2 just vegan egg (or two vegan eggs of choice)
1 cup non dairy milk
1 11.6 oz can of vegan condensed milk
15oz can of pure pumpkin
1 cup of brown sugar
1 tsp of pumpkin spice
1 loaf of bread cut into cubes
1/2 cup of chopped pecans
Vegan friendly whipped cream or ice cream for serving
Directions Preheat oven to 350 In a large bowl add your vegan egg, non dairy milk and vegan condensed milk Whisk until creamy Add in your brown sugar and pumpkin Mix until creamy Add in your pumpkin spice and mix well Place your cubed bread into a well greased 9x13 baking dish Pour pumpkin mix on top Gently mix so that all the bread has the pumpkin mix on it Sprinkle with your pecans Bake in preheated oven for 30-35 minutes Serve with whipped cream or ice cream Enjoy!
