Pumpkin Monkey Bread Muffins



These easy mini Monkey Breads are made using cinnamon rolls instead of biscuit dough and wrapped in a delicious pumpkin sauce.


(This makes 12 mini monkey breads, double the ingredients for serving more than 6 people)


Ingredients

1 can of Vegan friendly cinnamon rolls

1/2 cup vegan butter

1 cup brown sugar

1/2 cup pumpkin purée 

1 tsp pumpkin spice 

12 small muffin pan


Directions

Preheat oven to 350

In a medium saucepan pan add your butter

Heat to medium

Once butter has melted add in your brown sugar, pumpkin and pumpkin spice

Mix and cook for 3-5 minutes 

Remove from heat

Cut each cinnamon roll into very small pieces

Place a handful of pieces into your well greased muffin pan

Repeat with remaining dough

Gently press down on your dough  

Pour a small amount of pumpkin mix on top of each muffin until each is evenly covered 

Bake in preheated oven for 20-25 minutes 

Remove and oven and cool for at least 5-10 minutes

Using a butter knife carefully loosen your mini monkey breads

Place a baking pan upside down on top of muffin pan

Carefully flip and tap on muffins to remove from pan 

Some may need assistance if they stuck

Drizzle each with the icing from cinnamon rolls

Serve and enjoy!
