Sausage & Blueberry Biscuit Bake

This is one of the most delectable dishes. At first you think sausage and blueberry together?!?! But first bite and you'll understand the perfect mix of sweet and savory! This is an easy meal where you can just throw in the ingredients and let the oven do all the work!


1-2 cups of crumbled and cooked vegan breakfast sausage, we used Beyond Meat

1/2 cup of melted vegan butter, plus 1-2 tbsp for pan (not melted)

1/2 cup sugar

1-2 cups of fresh blueberries

1/2-3/4 cup of chopped pecans

1 can of vegan friendly biscuits, chopped into small pieces

Syrup for serving


Preheat oven to 350

Brush a 9x13 pan generously with butter

Add in your biscuit pieces

Sprinkle in sugar

Mix until biscuits are evenly coated in sugar

Sprinkle your blueberries evenly over the biscuit pieces

Followed by your vegan sausage and pecan pieces

Drizzle with your melted vegan butter

Bake in preheated oven for 35 minutes until golden

Serve with syrup
