Savory Breakfast Pastries

Delicious handheld breakfast using puff pastry filled with vegan scrambled eggs, sausage and cheese! Can we say YUM!?!?!


1 sheet of Puff Pastry, thawed

Roughly 3-4 cups of vegan scrambled eggs or tofu scramble

8oz of cooked vegan sausage pieces

7oz vegan cheese shreds

1/4 cup of Just vegan egg or melted butter

Salt and pepper

Chopped chives for garnish


Preheat oven to 400

Roll out your Puff Pastry into a large rectangle

Cut into 8 smaller rectangles

Place pastry rectangles onto prepared baking sheet

Sprinkle each pastry with shredded cheese

Place a large spoonful of scrambled eggs on top

Top each with a few pieces of your vegan sausage

Take one end of your rectangle and fold over

Take opposites corner and fold over

Pinch corners to seal

Repeat with remaining pastries

Brush each with vegan egg or butter

Season generously with salt and pepper

Bake in preheated oven for 15-20 mins

Remove when golden

Sprinkle with chives

Serve and enjoy!
