Savory French Toast Crumpets

If you love savory breakfast recipes, these savory French toast crumpets are about to become your new obsession. Crispy on the outside, soft and fluffy inside, and topped with flavor.
Perfect for breakfast, brunch, or even a quick dinner, this recipe comes together fast and is completely customizable with your favorite toppings. Think cheese, herbs, avocado, or even a plant-based protein for extra flavor. Today we are doing tomatoes, basil and balsamic!
Ingredients
12oz of Cherry Tomatoes
2 tbls of crushed garlic
2 tbls of Balsamic Vinegar
1/2-3/4 cup vegan egg
1/3 cup of Non Dairy Milk
1/3 cup of Nutritional Yeast
Garlic Salt and pepper
1/2 cup of fresh chopped basil
4 tbsp vegan butter, for pan frying
Crumpets
Olive oil
Directions
Heat a pan over medium high heat
Add in a little oil
Add in your tomatoes
Cook for 5-7 minutes
Add in garlic
Cook for 1-2 minutes
Add in balsamic vinegar and cook down
Add in a small handful of basil
Remove from heat
In a medium shallow dish add your vegan egg, milk, nutritional yeast and garlic salt and pepper
Mix well
Heat a little butter in a large pan over medium high heat
While butter is melting dip your crumpets into egg mixture to fully coat
Shake off any extra and place into pan
Cook until golden on each side
Remove and repeat with remaining crumpets
Plate crumpets
Top with tomato mix
Drizzle with balsamic glaze
Garnish with remaining basil
Seve and enjoy!
