Spaghetti & Meatball Cups (Vegan)

Today we collaborated with Pure Farmlands to create a delicious recipe using their Plant Based Meatballs. Pure Farmland has a full range of protein-packed, plant-based products that have you covered for Breakfast, Lunch and Dinner.


In this recipe we are using their Homestyle Meatballs. They are super flavorful, easy to make, and packed with protein.


(Makes 12 Meatball Cups)


Ingredients

1 16oz package of Pure Farmland Meatballs

10oz of spaghetti noodles

1/4 cup of Vegan Egg

2 cups Spaghetti Sauce

1/3 cup of shredded Vegan Mozzarella

Vegetable Oil

Salt and Pepper

Roughly 1/4 cup of shredded parmesan



Directions

Preheat Oven to 400

Break your noodles into 2-3 inch pieces, and boil in salted water until ready

Drain and rinse under cold water and drain again

In a medium bowl add your vegan egg

Season with salt and pepper

Add in your prepared noodles

Stir in your cheese and roughly 1/3-1/2 cup of tomato sauce (We just want enough to give a little color and flavor)

Spray your muffing pan generously with cooking spray

Take a small amount of spaghetti mix and press into muffin and then press down to create a well

Repeat with remaining noodles, to make 12 small muffins

Place into preheated oven for roughly 15-17 minutes until firm

While muffins are cooking lets prepare our meatballs

Heat a little oil in a large frying pan over medium high heat

Add in your meatballs

Sauté on all sides, turning pan often to allow the meatball to brown up

After 8-10 minutes add in roughly 1 cup of tomato sauce

Cover and cook an additional 5-8 minutes

Turn off heat

Lets build our cups

Carefully remove your firmed up spaghetti cup from muffin pan

Place into serving plate

Spoon a little of tomato sauce onto each cup

Top with your cooked meatballs

Then add a little more tomato sauce to the top of each meatball

Sprinkle with shredded parmesan cheese

Serve and enjoy!
