Delicious easy to make Strawberry Cookies using Strawberry Cake Mix . How easy is that. Not only are they easy to make they are absolutely delicious! And using heart shaped sprinkles these make a great Valentines Day cookie!
Ingredients
15oz vegan friendly strawberry boxed cake mix, we used Berry Crocker
1/2 cup vegetable oil
1/4 cup of just egg, or 2 vegan egg substitutes
Sprinkles if using
Directions
In a medium bowl add your cake mix, oil, vegan egg, lemon juice and zest
Mix well until creamy, if too wet still, add in flour until thickened (should be a little softer than cookie dough)
Place dough into refrigerator for roughly 20-30 minutes
Preheat oven to 350
Remove dough from fridge
Using a spoon or ice cream scoop
Scoop a round ball from dough
Roll into a ball
Then roll the dough ball into your sprinkles if using
Place onto prepared baking sheet
Repeat with remaining dough
Bake in preheated oven for roughly 8-10 minutes(They may look still uncooked but will settle upon removing from oven)
Remove and let cool
Serve and enjoy
