The Best Taco Salad

This is hands down my absolute favorite go to salad. Its packed with so many flavors and textures. It is fresh yes very filling. I must say the ket here is the dressing. While others will still be delicious i think this dressing is the icing on top!


14-16oz of vegan ground meat

1 tbsp taco seasonings

3-4 cups of chopped lettuce (Iceberg and Romaine mix is my preference)

1 cup of cooked corn (drained)

1 cup of cooked black beans (drained)

1 cup of chopped cucumbers

3/4 cup of chopped tomatoes

1/2 cup diced red onion

3/4 cup of diced jicama

2 avocados chopped

1/2 cup of vegan sour cream

1/2 cup of shredded vegan cheese

Tortilla strips

Vegetable oil

Briannas blush wine vinaigrette, this is THE BEST STUFF


In a large non stick pan heat a little oil over medium high heat

Crumble in your vegan ground meat

Cook until starting to brown

Season with taco seasonings

Continue to cook and crumble until browned

Remove from heat and let cool slightly

In a large salad bowl add your lettuce, onions, tomato, beans, corn, cucumber, jicama

Toss to combine

Top with your avocado

Add your prepared ground meat

Drizzle with desired amount of dressing

Sprinkle with vegan cheese shreds

Add your sour cream and garnish with tortilla strips

Serve and enjoy!
