Tomato Egg Rings

Delicious tomato rings, pan fried with vegan scrambled eggs inside. It's very similar to a quiche, just without the crust.


1-2 Large Tomatoes

3 Tbsps finely diced red onion

1/4 cup of chopped green onions, plus more for garnish

1 tsp garlic powder

1 tbsp of flour

Salt and pepper

12oz vegan liquid egg, we used one bottle of Just egg


Slice your tomatoes, try to make the cut very flat

Carefully cut out the inside to make a ring

Chop up the inside to use, you may have more than you need

In a medium bowl

Add roughly 1/4 cup of the chopped tomatoes

Add in your green onions, red onion, garlic powder, and 1 tbsp of flour

Pour in your vegan egg

Season with salt and pepper

Whisk until blended

Heat a non stick pan over medium

Place your rings into the hot pan

Press down to seal them into the pan ( this will help the egg mix not spill out of the bottom)

After 1 minute pour a little of you egg mix into each tomato ring, being careful to not overfill

Cover and cook until set

Remove lid and carefully flip

Cook for an additional 1-2 minutes

Remove and repeat with remaining tomatoes and egg mix

Plate and garnish with remaining green onion

Serve and enjoy!
