Tortilla Breakfast Pizza

This crispy tortilla breakfast pizza is my go-to when I want something quick, easy, and actually satisfying. The tortilla gets perfectly golden and crunchy, topped with eggs, cheese, and your favorite breakfast toppings.


Ingredients

Flour tortillas

Scrambled vegan eggs

Shredded vegan cheese

Chopped cherry tomatoes

Cooked vegan sausage cut into chunks 

Cilantro

Sauce: 1/2 cup vegan mayo, 3-4 tbsps hot sauce of choice, 3 tbsps maple syrup



Directions

Whisk together sauce ingredients

Preheat oven to 425

Place tortilla onto prepared baking sheet

Spread tortillas with sauce

Sprinkle with shredded cheese

Add your scrambled egg

Top with vegan sausage and tomatoes

Bake in preheated oven for 5-8 minutes until crispy and cheese is melted

Remove from oven

Garnish with cilantro

Slice serve and enjoy!
