2 tablespoons fresh cilantro, chopped
½ jalapeño, finely diced (optional)

👩‍🍳 Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. Prepare the Puff Pastry
Unfold the thawed puff pastry sheet and cut it into 6 equal rectangles.
3. Assemble the Upside-Down Tacos
On the prepared baking sheet, create 6 small piles of shredded vegan cheese, spacing them evenly apart.
Top each pile with a generous spoonful of cooked vegan taco grounds.
Place one puff pastry rectangle directly over each pile of taco grounds and cheese.
Gently press around the edges of the pastry to help seal everything underneath.
4. Brush with Vegan Butter
Brush the tops of the puff pastry rectangles with melted vegan butter for a beautiful golden finish.
5. Bake
Bake for 15–20 minutes, or until the puff pastry is puffed, golden brown, and crispy.
6. Flip the Tacos
Remove from the oven and allow to cool for 2–3 minutes.
Carefully flatten and then flip each puff pastry rectangle over using a spatula, revealing the melted cheese and seasoned taco grounds.
7. Add the Fresh Toppings
Top each pastry with diced avocado and fresh pico de gallo.
8. Serve and Enjoy!
Fold each puff pastry rectangle like a taco and enjoy the perfect combination of crispy, flaky pastry, savory taco filling, and fresh toppings!
đź’ˇ Tips
