Vegan BBQ Chicken Totchos

Crispy tater tops topped with melted vegan cheese, vegan bbq chicken, vegan ranch, pickled red onions and chopped green onions.


32oz Frozen tater tots 12-16oz of vegan chicken 1 tbsp vegan butter 1/2-3/4 cup of bbq sauce, we love Kinders mild bbq 4-5 slices of vegan smoked Gouda Vegan Ranch, we love Follow Your Heart Chopped Pickled red onions, quick recipe below Green onions or chives, chopped

Directions Cook tater tots according to directions While tater tots cook prepare your bbq vegan chicken Heat a large non stick skillet over medium Add in your butter Once melted add in your vegan chicken Cook for 5-7 minutes turning often Add in bbq sauce, enough to fully coat chicken Cool for another 5 minutes Turn off heat Remove tater tots from oven Place cheese slices evenly ontop Then add your bbq chicken Place back into heated oven for 5-7 minutes, until cheese is melted Remove and let cool 5 minutes Drizzle with vegan ranch Sprinkle with pickled onions and chives Serve and enjoy!

Pickled red onions Ingredients 1 red onion sliced 1/2 cup apple cider vinegar 1 tbsp white sugar Pinch of salt 1 cup hot water Directions Place your onions inside a jar with lid In a medium bowl whisk together remaining ingredients Whisk until sugar is dissolved Pour over onions into jar Making sure onions are submerged Cover and let sit for one hour Use after 1-2 hours or refrigerate until ready to use
