A simple yummy mess of nothing but healthy and tasty ingredients. Throw it in a waffle maker and you have your new favorite go to dish!
Ingredients:
1-2 bags of Frozen Sweet Potato Fries, cooked until softened*
10oz of Soy Chorizo
1 15oz can of black beans
1 sweet onion, chopped
1 bunch of kale, stems removed and roughly chopped
Ā¼ cup of water
2 tablespoons of nutritional yeast
Salt and Pepper
Olive Oil
Hot Sauce
*use more fries if your waffle maker is a large one
Directions:
In a medium frying pan sautƩ your onion over medium-high heat
Cook onion for roughly 5-7 minutes
Stir in your Soy Chorizo
Cook for 3-5 minutes
Add in your black beans and cook for 2 minutes
Sit in your kale
Slowly stir in your water
Cook for an additional 2 minutes
Stir in your nutritional yeast, salt and pepper
Remove from heat to cool
Heat your waffle maker and spray generously with cooking spray
Place half your fries onto waffle maker
Close and cook for 3 minutes until formed into a waffle
Place a generous amount of your chorizo filling on top
(there will be extra filling)
Place remaining fries on top and close your waffle maker
Cook until starting to brown and getting crispy
Carefully remove from waffle maker and cut into squares
Serve each square with an additional amount of chorizo filling
Top with hot sauce of choice
