Herb Stuffed Zucchini

Transform simple zucchini into a flavorful, fresh, herb-stuffed dish! This easy recipe makes the perfect light dinner, side dish, or meal-prep option.
Ingredients
4 Zucchinis
1 rounded cup panko bread crumbs, you can also use quinoa instead
2 tbsps minced garlic
Salt and pepperÂ
1 16oz jar roasted red pepper, drained and choppedÂ
1/3 cup melted butter
1/3 cup nutritional yeast
3/4 cup Parmesan
1/4 cup freshly chopped parsley plus more for garnish
Olive oil spray
Directions
Preheat oven to 425
Cut zucchini’s in half and scoop out the seeds
Place cut size up into prepared baking pan
In a large bowl add breadcrumbs, garlic, pepper -‘d melted butter
Season with salt and pepper
Mix well
Add in your nutritional yeast, parmesan and parsleyÂ
Mix well
Fill each zucchini with breadcrumb mixture, it’s ok to overfill them
Spray tops with olive oil spray
Bake in preheated oven for 25-30 minutes
Remove and garnish with parsley
Serve and enjoy!Â
