Soyrizo and Nopales Tacos


Creating dishes with whatever you have in the kitchen can sometimes create amazing things. These simple tacos are super tasty and unique in flavor!

Ingredients:

12oz of Soy Chorizo

1/2 onion, diced

12 oz of mushrooms, chopped

1-2 tsp paprika

Garlic salt

1 tbl apple cider vinegar or white vinegar

1 can of white beans

1/3 cup of FYH Vegan Mozzarella Shreds

Oil

Nopales Salsa, recipe below

Directions:

In a large frying pan add a little oil

Add onions and heat over medium-high

Cook for 5 minutes

Stir in mushrooms

Cook an additional 5-7 minutes

Stir in soy chorizo

Cook for 3-5 minutes

Add in your paprika, salt and vinegar

Stir in your beans

Mix well

Add in your cheese and turn off heat

Allow cheese to melt, stir again

Top with salsa

Serve

Nopales salad/salsa:

1-2 cups of cooked cactus

1 tomato, chopped

½ small red onion chopped

Handful of chopped cilantro

Juice from 1 lemon

Drizzle of olive oil

1-2 tsp of white or red vinegar

Salt to taste

Combine all ingredients and marinate for 30 minutes
