Lemon 'Chicken' and Potatoes


There is just something about a buttery lemon sauce that gets me every time!

Ingredients:

1 head of cauliflower, florets

1 bunch spinach

1-2 cups baby potatoes

1 package Beyond Meat grillers

1 tbl chicken-less bouillon

1/2 cup water

1 onion, roughly chopped

5 garlic cloves minced

1/3-1/2 cup butter

1 tbl flour

1/4 cup nutritional yeast

Juice of 2 lemons plus 1 extra lemon for garnish

Garlic salt

Garlic pepper

Directions:

Preheat oven to 400

Add cauliflower and potatoes to large mixing bowl

In a medium sauce pan add grillers water and bouillon

Heat over medium-high heat for 5 minutes

Remove from pan and set aside

Remove grillers from liquid, Reserve liquid for later

Cut grillers into bit size pieces

Using same pan add 2 tbl of butter

Heat over medium-high

Add in onion

Sauté for 3-5 minutes

Add in garlic and cook for additional 2 minutes

Pour over potato and Cauliflower mix

Season with garlic salt

In same pan

Add in spinach Toss until wilted

Remove and set aside

In same pan melt remaining butter, a little less than half a cup

When melted whisk in flour and nutritional yeast

Slowly whisk in reserved broth

Pour in additional 1 cup water and lemon juice

Heat thoroughly

Pour half liquid over potato and caulimix

Toss well

Pour into large casserole dish

Bake in preheated oven for 20-25 minutes

Remove and carefully add you grillers, spinach and 1/2 remaining liquid

Bake an additional 10 minutes

Remove and serve with lemon slices and remaining liquid
