Sweet Potato Shepherd's Pie

Sweet but Savory Pie, oh my!


2-3 sweet potatoes, peeled and cubed

1 package of Beyond Meat Crumbles

1 Beefless Cube

Roughly ½ cup earth balance butter

¼- 1/3 cup Non Dairy Milk

Salt and pepper

1 small onion, diced

½ cup BBQ Sauce

1 package of frozen spinach, thawed and drained

1 cup of cooked corn

1 rounded tbls of flour

¼ cup water



Preheat oven to 375

Boil your potatoes until tender

Drain and mash with ¼ cup butter and milk

Season with salt and pepper

Set aside

In a large frying pan add a little oil and your onions

Sauté over medium high heat

Cook for 5 minutes

Add in your Beefless Crumbles

Cook for 5 minutes

Add in your remaining butter

Once melted stir in your flour and beef less cube

Stir in your water

Season with salt and pepper

Oil your baking pan

Add in your beef mix

Drizzle with bbq sauce

Add your corn and spinach

Season with salt and pepper

Spread your cooked potatoes on top

Cover and cook for 20 minutes

Remove cover remaining 5-10 minutes

Serve and enjoy!
