Loaded with solid ingredients that are good for the palate and soul!
Ingredients:
1 package of Sweet Earth Foods Chipotle Seitan
1 can of black beans
2 ears of corn, cooked kernels removed
1-2 cups of chopped mini peppers
1-2 avocados, chopped
1 tbl of chopped garlic
Oil for pan frying
Ninja squirrel sriracha
4-6 oz FYH Sour Cream
FYH Shredded Mozzarella
Flour Tortillas
Ms Vegan Pico De Gallo, recipe below
Directions:
In a medium frying pan add a little oil over medium high heat
Add in your garlic and cook for 2 minutes
Add in your seitan and fry roughly 5 minutes
Add in 2 tbl of sour cream and hot sauce(desired amount)
Turn off heat
In a large bowl add your corn, beans, avocado, peppers and seitan mix
Mix well
Heat a frying pan to medium heat
Add your tortilla
Sprinkle half with mozzarella shreds
Top with a good amount of filling
Add more cheese
Close the tortilla and press down with spatula
After 2 minutes, when gold, carefully flip the quesadilla
Cook until golden
Remove and serve with pico de gallo and sour cream
Ms Vegan Pico:
3 tomatoes, diced
1/2 red onion diced
1/4-1/2 cup cilantro, as much as you like
1 lemon, juiced
Garlic Salt
Pepper
Directions:
Mix together all ingredients
Let marinate for 15 minutes
Add more salt or lemon if needed for your taste
