Ratatouille Lasagna


This flavor is about as rich and gourmet as it gets. The veggies, noodles and sauce just melt in your mouth. Cant get your kids to eat Veggies? Heres the perfect dish to sneak them in!

Ingredients:

Ms Vegans Ratatouille

1 package of instant Lasagna noodles (at least 12 noodles)

Ms Vegan Parmesan, recipe below

Sauce below

Lasagna sauce:

1/2 package Follow Your Heart mozzarella shreds

1 tablespoon dijon mustard

Pinch Chili powder

1 teaspoon Garlic salt

3 cups almond milk

4 tablespoons of flour

5 tablespoons of earth balance butter

1 tablespoon nutritional yeast

Directions:

Preheat oven to 375

In a large pan melt your butter

Whisk in your flour

Slowly whisk in your milk, 1 cup at a time

Continue to cook stirring often

Stir in your cheese and seasonings

Cook until cheese has melted

Remove from heat

(should be creamy thick sauce, think pancake batter)

Spray a 8x11 pan

Drizzle a little cream sauce

Lay down 3 noodles

Top with a large amount of ratatouille mix

Drizzle with cream sauce

Sprinkle with Ms Vegan parmesan

Repeat 2 more times

Top with remaining noodles

Drizzle remaining cream sauce and sprinkle a little parmesan

Cover and bake for 15 minutes

Remove cover and bake an additional 10 minutes

(keep an eye on it, if cheese gets hard put the cover back on)

Remove and let sit for 5 minutes before serving

MsVegan Parmesan

In a food processor blend together:

1 cup of cashews

1/3-1/4 cup of nutrional yeast

1 teaspoon of garlic salt
