The perfect hearty healthy go to bowl. From the sweetness of the butternut squash to the kick of the blackened 'chicken,' this bowl hits every taste bud!
Ingredients:
1 package of Beyond Meat Grilled Strips
1 chicken-less cube
1/3 cup water
Blackened Seasoning: (1 tsp paprika, 1 tsp cumin, 1 tsp of cayenne pepper, ½ tsp garlic powder, 1 tsp garlic salt, pinch of peper)
3-4 cups of fresh baby spinach
1.5 cups of cooked Quinoa
1 butternut squash, peeled and cubed
1 cup Cherry Tomatoes, sliced thin
1-2 tbl butter
Tahini Dressing, recipe below
Directions:
Preheat oven to 425
Place squash onto a baking sheet and bake for 20 minutes until roasted
Combine the first 3 ingredients in a small sauce pan
Heat over medium high heat for 5-8 minutes
Turn off heat and let sit in liquid for 20-30 minutes
Remove from liquid and roughly chop
Set aside
Combing your blackened seasoning in a small bowl
Mix well to combine
Toss into your chopped chicken, mix well
In a large frying pan melt your butter over medium high heat
Once metled add in your chopped blackened chicken
Cook for roughly 5-7 minutes
Remove from heat and let cool slightly
In a large mixing bowl add your spinach and quinoa
Mix well
Plate:
Place a generous mixture of spinach and quinoa mix onto bowl or plate
Top with roasted squash and tomatoes
Drizzle with dressing and top with blackened ‘chicken’ Serve and enjoy!
Tahini Dressing
Dressing
2 tbl of tahini
2 tbl of Follow Your Heart sour cream
3 tbl of olive oil
1 tbl of white wine vinegar
Pinch of garlic salt
Pinch of sugar
Combine all ingredients together.
Mix well. Marinate for 30 minutes before serving.
