Garlic Roasted Veggies


Such a perfect hearty side dish that makes you feel good inside!

Ingredients:

2 zucchinis, chopped

2 squash, chopped

5-6 red potatoes, chopped

3 tbl of minced garlic

8-10 whole garlic cloves

2 tbl olive oil

1/4 cup nutritional yeast

1/2 tsp chipotle chili powder

1 tsp garlic salt with parsley

2 tbl of Follow Your Heart Parmesan

pinch of pepper

Directions:

Preheat oven to425

Combine all chopped veggies into a large bowl

Toss with olive oil, minced garlic, and whole garlic

Place into greased baking sheet

Place into preheated oven for 30 minutes

After 10 minutes carefully remove pan

Stir in your chili powder, salt, pepper and nurtional yeast

mix well

Place back into oven to roast for remaining 20 minutes

Should be starting to brown on top

Remove and add your parmesan

Cool for 5 minutes before serving
