Sometime keeping it simple is the best way to go. They turn out to be the tastiest dishes. Each bite just melts in your mouth!
Perfect weeknight dish. And let's not forget how amazing even the leftovers are!
Ingredients:
1 package of Beyond Meat Chicken-less grillers
1 tablespoon of chicken-less flavor
1/2 cup of water
8oz of Mushrooms, sliced
1 head of Cauliflower, cut into florets and roughly chopped
Ā½ onion, chopped
1/2 stick of Earth Balance butter
2 tablespoons of olive oil
1-2 tbl of Nutritional Yeast
Salt and Pepper
Ā½ bunch of parsley chopped
Directions:
In a medium sauce pan add the first 3 ingredients
Cook over medium/high for 5-7 minutes
Let sit for 10 minutes
Remove grillers from broth
Reserve broth
Heat olive oil in a large frying pan
Add your onions and cook for 2-3 minutes
Add in your Cauliflower and cook for 2 minutes
Add in your mushrooms
Continue to cook for 5 minutes
Remove from pan
Add your grillers to the pan
Cook until grillers start to brown
Add in your mushrooms and onion mix
Add in your butter
Stir until melted
Slowly stir in your broth
Continue to cook for 5 minutes
Stir in your nutritional yeast
Season with salt and pepper
Stir in fresh chopped parsley
Turn off heat and serve immediately
I enjoy this over rice, quinoa or cauliflower rice!
