Such a sweet little snack topped with some delicious protein. Perfect on the go for when you need a little something sweet!
Ingredients:
½ cup walnuts
½ rounded cup of dates
2 tsp of cocoa
1.5 cups of raw cashews, soaked overnight or quick boiled
1/3 cup of Califia Farms Coconutmilk Go Coconuts or regular full fat coconut milk, or more
1/3 cup of maple syrup
1 lemon juiced and zested
1 tbl of cornstarch
2- 22 Days Nutrition Chunky Peanut Butter protein bars, crumbled
Directions:
Preheat oven to 375
In a food processor add your dates and process until crumbled
Remove and set aside
Add your walnuts and process until finely crumbled
Return your dates to the walnuts
Add in your cocoa
Process until blend and crumbled
Remove
Spray a mini muffin pan generously with cooking spray
Press a small spoonful of date and walnut crumble into each mini muffin to form crust
Press down firmly, set aside
Add your drained cashew’s to clean food processor
Add in your lemon, coconut milk, maple syrup, and cornstarch
Blend until creamed well
Taste adding more maple syrup if you prefer it sweeter
If too thick add in more coconut milk, should be a really thick pancake batter consistency
Spoon a little bit over your walnut/date crust
Bake in preheated oven for 20-25 minutes until firm
Remove and while hot top each with your crumbled protein bars
Carefully press them down into the muffins
Allow to cool to room temperature
Then remove from pan and cool in refrigerator for 1 hour
