Mini Breakfast Burritos


Who doesn't love Breakfast Burritos? These mini ones are the perfect grab and go!

Ingredients:

12 oz of tofu, drained and crumbled

Pinch of black salt

2-3 Follow Your Heart Vegan Eggs

1 tbl chopped garlic

8oz mushrooms, chopped

1 yellow zucchini, chopped

½ onion chopped

1 orange bell pepper chopped

1 package of Trader Joes soyrizo

2 cups fresh spinach

½ rounded cup Follow Your Heartmozzarella

Olive oil

Medium to Large Tortillas

Tomaotes, ketchup, avocado, extra cheese (optional)

Directions:

In a medium sauce pan add a little vegetable oil

Add in your onions and cook until translucent

Add in your garlic

Add in your vegetables

Cook for roughly 5 minutes

Crumble in your tofu

Mix well

Add in your soyrizo

Cook for 4-5 minutes

Remove from pan

Return pan to heat

Add in a little more oil

Add in and cook your vegan eggs until scrambled

Return tofu mix back to pan and mix with your scrambled aggs

Carefully add in your spinach

Cover and cook for 2-3 minutes

Mix well to fully mix in your spinach

Add your mozzarella and season with salt and pepper

Prepare your burritos:

Add your toppings

Roll up, Serve and enjoy!
