Mediterranean Tempeh Bowl

There is nothing like a hearty bowl of delicious but nutritious ingredients!

(This makes 2 hearty bowls)


1 block of West Soy Tempeh

Tempeh Marinade, recipe below

2 yams, peeled and cubed

1 head of cauliflower, cut into florets

1 bag of frozen Green Giant Cauliflower and Broccoli Rice

4 large tomatoes

Tzatziki Sauce, recipe below

Tahini Sauce, recipe below

Romaine lettuce leaves, optional


(Do night before)

Heat water in a small sauce pan over medium-high heat

Cut your tempeh in half

Place into water and boil for 5 minutes

Remove and let cool

Slice into thin slices

Place into a large shallow dish

Cover with your Tempeh seasoning/marinade

Cover and refrigerate overnight

Next Day:

Heat your oven to 425

Cut your tomatoes in half

Place onto baking sheet cut side down and bake for roughly 30 minutes until roasted

Toss your cauliflower and yams with a little olive oil and garlic salt

Place onto baking sheet and bake or roughly 30 minutes until roasted

Place your marinated tempeh onto a baking sheet

Pour half remaining marinade on top

Bake for roughly 20 minutes, halfway during cooking pour remaining marinade on top

When all items are done remove from oven

Flip your tomatoes and season with salt

Prepare your veggie rice according to directions

Prepare your bowl

If using romaine place down in bowl

Add your veggie rice, roasted veggies and roasted tomato

Add your sauces

Top with tempeh

Serve and Enjoy!

Tempeh Marinade

(Combine the following)

1 tbl of olive oil

1 tbl of red wine vinegar

½ tbl of Follow Your Heart Vegenaise

1 tsp dried oregano

Juice from 1/2 lemon

1 tbl of minced garlic

1 tsp of garlic salt

½ tsp of pepper

½ tsp beefless seasoning mixed with ¼ cup water (or use ¼ cup vegetable broth)

Tzatziki Sauce

Combine the following:

½ cup of Follow Your Heart Sour Cream

1/3 cup of finely chopped/minced cucumber

2 tbl of minced garlic

Juice from ½ lemon

Dash of White Wine Vinegar

1 tsp garlic powder

Pinch of salt

Tahini Sauce

Combine the following ingredients together:

2 tbl of tahini

1/3 cup of Sour Cream

1 tsp of garlic powder

Juice from 1/2 lemon
