Loaded Sweet Potato


There is something special about a white sweet potato! And with the addition to these fresh veggies and delicious BBQ sauce, it makes it that much better.

Ingredients:

4 White Sweet Potatoes

3 cups of Broccoli Florets

12-15 oz of Mushrooms, sliced

2 garlic cloves, minced

Olive oil

Garlic Salt

Pepper

Earth Balance Butter

Stubbs BBQ Sauce (or any other vegan friendly bbq sauce will work)

Directions:

Preheat oven to 375

Wash your potatoes and dry them

Pierce each potato with a fork several times

Place onto a baking sheet and place into pre heated oven

Bake, turning halfway through, for 30 minutes until tender

While potatoes are baking prepare the filling

In a large frying pan add a little and heat over medium

Add in your garlic and saute for 2 minutes

Add in your mushrooms

Cook for 3-5 minutes

Mix in broccoli florets

Saute for roughly 5 minutes

Cover and cook an additional 3-5 minutes

Season with garlic salt and pepper

When potatoes are done remove from oven

let sit 5 minutes

Carefully handle the hot potatoes and cut slit on top

Add in a little butter ( or a lot, whatever you like)

Using a fork mash the potato meat and butter inside

Repeat with remaining potatoes

Fill each potato with the mushroom broccoli filling

Drizzle with bbq sauce

Serve and enjoy!
